Italian Grilled Cheese
INGREDIENTS1 loaf ciabatta bread
1/4 cup pesto
4 oz goat cheese
1 cup shredded Gouda
1/4 cup sundried tomatoes, julienned
1/4 cup roasted red peppers, julienned
DIRECTIONS
Slice ciabatta bread in half (this is hard because it's a thin bread)
Spread a thin layer of pesto on both halves
Crumble goat cheese over the pesto
Top the bottom half of the ciabatta with the sundried tomatoes and roasted red peppers
Sprinkle both halves with shredded Gouda
Bake in a 350F oven for 10 minutes, until cheese is melted and the exposed ciabatta is crisping up
Flip top half on to bottom half, and bake for 5 more minutes, until the top is crispy and just barely starts browning.
Cut into 1 1/2" slices and serve. I love pesto and prefer it as it is, but it would go well drizzled with a little Italian Dressing as well.

That looks very good, but I've never had goat cheese - anything you can compare it to in flavor?
Pure, creamy, delicious heaven!
Not really sure... it's crumbly but creamy at the same time, mild, slightly salty, not like feta salty... oh I have no clue...
It's on the spendy side, but it's one of my vices... That and brie to eat with red grapes...
This recipe has some strong competing flavors, if you want to try goat cheese to really appreciate it just smear a bit on a piece of toasted bread or bagel and then put it under a broiler to warm it (it will hold it's shape, so don't leave it too long)
This cucumber salad is my favorite way to have goat cheese though

Oh my goodness! This must go on the menu plan for next week. Drat, not next week, hubby leaves for two weeks. Hmmm, then I wouldn't have to share. Tempting! :)
